(Serves 4)
14 oz. (315g) Tofu, Medium firm For Dressing |
2 Tbsp. Miso & Easy Ginger Tomato |
2 Tbsp. pesto sauce |
3 oz. (85g) Blue Cheese, such as Roquefort or Gorgonzola |
1 tomato, cut into bite-size piece |
1 bunch fresh basil |

- 1. Mix all dressing ingredients in a bowl. Set aside.
- 2. Wrap tofu with a paper towel to remove any excess water. Tear into bite-size pieces by hand. Place onto a serving plate.
- 3. Crumble Blue Cheese by hand over tofu. Add tomato to the plate, and top with basil leaves. Drizzle dressing over and serve immediately.
