(Serves 4)
2 blocks (10 oz each) pork tenderloin |
For Marinade |
4 Tbsp. Miso & Easy Ginger Tomato |
2 cloves garlic, chopped |
2 Tbsp. brown sugar |
1 tsp. red-chili paste, such as Tobanjan |
1 Tbsp. sesame oil or olive oil |
3 to 4 pieces sliced lime |
Fresh thyme for garnish |
- 1. Mix all marinade ingredients in resalable plastic bag. Add pork and rub well.
Store in refrigerator over 4 hours.
- 2. Pre-heat oven to 400F(200C). Remove pork from marinade. (Reserve the marinade for basting.) Place pork in a roasting pan and cook for 30 to 40 minutes. Turn pork over several times during roasting while basting with the marinade. If desired, broil the pork for extra grilling flavor. Slice and serve warm. Garnish with sliced lime and thyme.
